This is Acrobat Reader #7 running in Windows XP. It seems to function the same in 2000 Pro.
The controls are basically the same for Acrobat Reader 6.

First you need to download the PDF image of choice.

If there is no "Picture Tasks" button you will find a "Hand Tool" and a "Select Tool" button as well as a "Snapshot" button.

 
The "Hand Tool will only move the image around the window.
The "Snapshot" will only copy an image to the "Clipboard" that is low resolution.
Use the "Select Tool"

When a cross-hair appears on the image, left click on the image.
The image will darken and there will be a small button.

When you mouse over it (place the arrow over it) the button expands,
Left-click on the button.

At this point you need to select your favorite graphics program, (or the only graphics program you have), instructions are different for each program.
